Apologies for yet another strawberry recipe. I loved Cherry Ripes as a child but find they are far too sweet for me now but still occasionally feel like a cherry and coconut treat. My Raspberry Mock-arons, taste just like a Cherry Ripe but when I don't really feel like waiting for six hours for them to dry in the dehydrator, I put these Strawberry Ripe balls together. These are delicious and super easy.
Strawberry Ripe Balls
2 cups Descicated Coconut + Extra for rolling
1/2 cup toasted pumpkin seeds (plain almonds can also be used if allergies aren't an issue)
250 grams fresh strawberries or 1 cup of frozen raspberries or blueberries
1 or 2 tablespoons of honey or 3 medjool dates
2 tablespoons of Raw Cocao or carob
2 tablespoons Cocao nibs (optional)
Place Pumpkin Seeds in a coffee grinder or thermomix and grind until find. Add all of the other ingredients and blend until combined. If the mixture is a little too wet, add some more coconut. Roll into balls before rolling in extra coconut. Refrigerate to firm up.
